A study at Oregon Health & Science University showed that adults who drank cherry juice twice daily for a week before a long-distance run suffered significantly less muscle pain than those who drank other kinds of fruit juice. Scientists believe that the same property that gives cherries their bright red color — antioxidant compounds known as anthocyanins — also acts as an anti-inflammatory agent. It has been found to provide some relief to people who suffer from arthritis and gout. February is National Cherry Month. Cherries are perishable, so be careful about how you store them. They can last a few days in your refrigerator in a perforated plastic bag; cover them with sugar or syrup, and they can be frozen.
